About Lakewood Regional Support

Our regional support center provides resources to our hotels for multiple areas including Human Resources, Engineering, Purchasing, Accounting, Security, Group Reservations, Guest Contact Center, Information Technology, Laundry and Communications.

This position is focused on producing essential reports for both Food and Beverage and Finance. Cost Control Department assists the Chefs campus wide to ensure proper preparation, production, portioning and pricing of menu items. Purchases by individual items are reviewed daily, compared to historical pricing trends and specifications, reviewed for corporate purchasing program compliance and reported to management. Daily menu mix of sales is reported against actual and theoretical costs and daily costs as a percentage of total sales is calculated and reported to management ensuring profitability. Cost of sales variances from budget expectations is analyzed and explained to management. Food costs per cover are tracked, reported, and analyzed. Responsibilities will also include inventory turnover reporting, maintaining accurate perpetual inventory records, producing statistical reports, assisting in the costing of new menu items and maintaining product specifications in standardized recipes.

Job Specific:

Reporting and analysis

  • Complete weekly pricing fluctuation reports for review by Executive Chef
  • Review daily purchases for historical pricing trends and compliance with Avendra program and report to management
  • Provide daily F&B flashes for culinary team and management, which will include daily costs as a percentage of total sales
  • Monitor accuracy of month end food and beverage costs as reported on the P&L and compare to theoretical/potential costs
  • Variances of month end cost of food reported on P&L to budgeted cost of food is analyzed and explained to management
  • Track, analyze and report to management food costs per cover
  • Review weekly food and beverage cost flash report prepared by LFSC to determine accuracy and areas for improvement
  • Maintain Campus pricing standards and compliance in Omnico Clarity

Inventory Maintenance

  • Monitor Adaco database for accuracy of pricing and pack size
  • Spot-check and document accuracy of perpetual inventory
  • Assist and train operations in the use and maintenance of Adaco purchasing templates, requisition templates and inventory count sheets
  • Monitor dead stock, distribute to operations, review plans to utilize product on monthly basis
  • Train operations on proper inventory procedures including counting and inputting. Monitor and document monthly results.

Audit procedures in place for Cost Control

  • Spot-check delivery invoices against purchase requisition and verify pricing accuracy
  • Complete random cost analysis of buffets and BEOs
  • Monitor the maintenance of beverage pars, audit compliance and utilization of bottle stickers, spot check for accuracy
  • Spot-check recipes for accuracy, portioning compliance
  • Ensure that House F&B charges are properly reported


  • Assist A/P with resolving any billing issues
  • Assist Storeroom team in cleaning up of open POs and unbilled receiving reports
  • Notify Director of Finance promptly and fully of all problems or unusual matters of significance
  • Other duties as required or assigned

  • Knowledge of food and beverage products, receiving and storage procedures and production
  • Working knowledge of computer Windows software programs
  • ADACO system experience is a plus
  • Effective organizational and communication skills
  • Ability to work flexible schedule to include weekends and holiday


  • High School Diploma
  • Coursework towards a degree in Finance or related discipline is a plus


  • Entry level role
  • Experience in food and beverage cost control or purchasing is a plus
